Ed, all of the non take-down blades were made from stainless.
Most of the take-down gravity knifes were also made from stainless and had the word "rosfrei" written below the maker marked ( pic attached ).
Rosfrei meaning that they were made from stainless steel.
The blades on the take-down model that had nothing written on them, were carbon steel.
The only exception being the carbon blades made by Weyersberg, which had the maker marked written but without the word "ROSTFREI".

I highly recommend the book for anyone interested in the Luftwaffe gravity knife.
Great reference book !
