Hello Nats,
The HJ-knife was standardized as early as 1933 and its length was set at 25 cm.
Only the very early examples will be a bid longer: the so called "eagle-heads" and the Carl Wüsthof so called "honor" knifes.

As you know, I'm a detail man. Is the 25 cm the knife only ... or the knife in the scabbard ?

That is an excellent question.
Actually, after measuring several standard HJ-knifes: the knife alone measures 24,5 cm and inserted in its scabbard 25,5 cm. With a variation of +/- 0,2 cm between different makers.
